Have an operational knowledge of recipes, standards, portion sizes and the presentation style of dishes produced within your designated section. Provide a consistently high level of service and product delivery. Participate in the production, preparation and presentation of meals. Work under supervision on all sections of the kitchen as required. Work with high quality fresh produce and organic ingredients as menus dictate. Receive details of the menu requirements and the quantities and portions required from the senior brigade. Ensure that sufficient supplies on your section are available, in order to meet the expected business demands of the shift. Ensure that all items produced are according to standard recipes, portion yields and within agreed time limits. Work at an efficient pace to ensure service levels are maintained at all times. Clean and maintain the kitchen and surrounding food preparation areas, including equipment and work surfaces, according to cleaning schedules.
