Hawarden Estate is a special, sprawling space of history and intrigue. Perched on the edge of North Wales beside the Roman city of Chester, it is home to a 13th-century fortification with iron-age origins and an 18th-century castle once home to four-time Prime Minister William Gladstone.
We have a multi-award-winning Farm Shop restaurant & bakery, some of the finest holiday homes in Britain, The AA Welsh Pub of the Year (2020), a campsite, a grade 1 listed private events space, The Walled Garden School that offers inspiration and education in craft, food and wellness and our famous Summer Camp.
The Position
We are looking for a talented Executive Chef to plan, organise and control the kitchen operations at Hawarden Estate Farm Shop, The Glynne Arms, Walled Garden, Summer Camp events as required and our sister estate Glen Dye in Aberdeenshire.
Responsible for
Implementation of all menus across the businesses listed above whilst ensuring that core business ethos of provenance, sustainability and quality are upheld.
Responsible to
The Group Executive Chef reports to Geoff Webber, Commercial Director of the businesses with a dotted line to Caroline Gladstone, Co-founder.
Duties/ Areas of Responsibility
The position will cover a broad area of responsibilities:
* Design new dishes for menus including specs, focusing on the best ingredients, sustainably sourced with a focus on provenance.
* Create, communicate and train seasonal, timely changes and updates to all menus.
* Recruitment of new kitchen team members with the support of the Senior General Manager & Head chefs.
* Mentor and manage the Head chefs at Hawarden Estate Farm Shop and The Glynne Arms.
* To maintain and raise the profit margins on menu dishes.
* Leading from the front, building a strong and successful partnership with your Head Chef to together create a positive and engaged kitchen team.
* Growing your teams and inspiring our next generation of chefs by having a pro-active approach to their development and career progression. Providing regular and honest feedback, conducting 1-1s and identifying any areas of improvement.
* Direct food events outside of regular business menus including running cookery courses in the Walled Garden School, doing private dining for Hawarden Holiday guests and assisting with large-scale events, among others.
* Provide ad hoc personalised menus where required.
* To cover chef absences in times of emergency. This is very much a hands-on role so you will be expected to support your teams throughout the week.
* Always maintain a positive and proactive attitude.

* Ensure all Food Hygiene Standards are adhered to.
* To ensure the completion of all HACCP paperwork and comply with the Health and Safety regulations in place.

* Due to the high-volume environment, we require somebody who has at least 2 years of experience at a minimum of Head Chef level in a fresh food restaurant looking to develop into an Exec role.
* Somebody with a flexible approach to work, this isn’t a typical 9-5 role, and both evening and weekend work will be required.
