Job Overview: To organise and supervise the unit in accordance with and to the standards required by Compass Group UK & Ireland, the contract specification and statutory Regulations. Responsible for the overall efficient and effective management of the unit under their control providing a quality service.
Key Responsibilities:
1. Preparation, cooking, and service of food to agreed standards and specification.
2. Ensure the efficient and economic use of all resources, including stock, team members, and company assets.
3. Understand and deliver all contractual terms.
4. Communicate any on-site client changes to the line manager.
5. Communicate regularly with the client (as agreed).
6. Complete action plans following client satisfaction surveys.
7. Promote the unit and act as a Compass Advocate at all times.
8. Ensure all client hospitality is delivered to the correct standard and look to upsell to increase revenue.
9. Ensure all company promotions are correctly implemented (where applicable).
10. Ensure all products are correctly priced in line with ‘Price it’ or in line with client specifications.
11. Identify any additional opportunities and discuss with the line manager.
12. Ensure all retail areas are adequately stocked at all times.
13. Ensure all customer requirements are delivered in line with expectations.
14. Analyse and manage effectively all in-unit costs.
15. Ensure full purchasing compliance.
16. Monitor and manage GP.
17. Ensure cost and sales records are accurately inputted and maintained.
18. Record and minimise all food wastage.
19. Communicate all customer requirements to all departments in advance to ensure effective planning.
20. Complete labour schedule within the labour budget.
21. Effectively minimise any agency and overtime spend.
22. Adjust labour schedule in line with sales.
23. Ensure budgets are understood and achieved.
24. Manage all costs effectively within budget.

1. Good knowledge and experience of working with food.

8. GCSE or equivalent in English and Maths.
9. Operational experience in the conference & banqueting sector.

13. Basic Food Hygiene certificate.
14. Leadership and team management skills for a small team.
15. Minimum 3 years catering experience.
16. Excellent financial acumen.
