The Carnegie Club at Skibo Castle is a prestigious private members' club based near Dornoch in the breathtaking Scottish Highlands. The Role
We are seeking a dedicated and passionate Baker and Viennoiserie Specialist to join our skilled culinary team. The ideal candidate will be responsible for creating high-quality baked goods, artisan breads, and a range of viennoiseries to delight our discerning members and guests. This role is perfect for someone who thrives in a collaborative, creative environment and has a passion for showcasing baking techniques.
Key Responsibilities
1. Prepare and bake a wide variety of products including artisan breads, croissants, brioche, danishes, and other viennoiseries to the highest standards.
2. Experiment with recipes to develop unique offerings that reflect the seasonal and regional ethos at Skibo.
3. Ensure all baked goods meet the aesthetic and quality expectations of The Carnegie Club.
4. Maintain consistent portion control and presentation standards.
5. Manage daily production schedules to ensure freshly baked goods are available for breakfast, afternoon tea, and other dining occasions.
6. Coordinate with the Head Chef and Pastry Chef to plan menus and special event offerings.
7. Adhere to all health and safety regulations, maintaining cleanliness and organisation in the bakery.
8. Ensure proper storage and handling of all ingredients.
9. Work closely with other kitchen staff to ensure smooth and efficient service.
10. Mentor junior team members, providing guidance on techniques and best practices.
About You
1. Proven experience as a Baker, preferably in a luxury hospitality or fine dining setting.
2. Expertise in crafting viennoiseries and artisan breads, with a strong understanding of fermentation and lamination techniques.
3. Formal culinary or baking qualifications are highly desirable.
4. Creative flair with a passion for innovation and quality.
5. Excellent organisational and time-management skills.
6. Strong knowledge of food safety and hygiene regulations.
7. You're eager to learn, open to guidance, and eager to advance your skills through the excellent training and development opportunities we provide.
8. You're friendly, enthusiastic, and hardworking.
9. You're a team player and enjoy working alongside colleagues in what can be a fast-paced environment.

Gratuities (tips) are passed directly to staff and paid to all employees on a pro-rata basis regardless of their role.
