About the role
We are looking for a highly-motivated and passionate manager to oversee the development of a modern commercial offer in order to provide an excellent student, staff and visitor experience across all of the University's catering and retail outlets - including the delivery of a high quality hospitality service to support a range of internal and external events
Main Responsibilities
To support the Director of Commercial Strategy in achieving the commercial revenue and profit targets/budgets along with the payroll budget for all staff at their designated catering and retail locations (Stoke, Stafford, Lichfield and London).
To lead, manage, motivate, train and develop all catering, retail and hospitality staff to achieve excellent operational standards and customer service.
To achieve food cost targets through effective menu development, costings, purchasing, portion control and minimal wastage, ensuring best value purchasing (quality, delivery, price, specification) taking advantage of all consortia/partnerships in complying with legislation.
To work in liaison with the Executive Chef and Head of Events and Conferencing to deliver excellent food and service excellent food for bespoke corporate events and occasions, VIP dining and external, paid-for bookings
To identify training needs and develop plans to deliver effective training for the retail catering and hospitality team, enhancing communication, decision-making, and resource deployment, while coaching, appraising, and developing staff to promote growth, team cohesion, high performance, and loyalty.
To ensure compliance with statutory legislation including management of licensed premises across extended opening hours involving out of hours work, Health and Safety and Food Hygiene and Environmental Health Legislation.
