St Austell Brewery is looking for a dynamic and collaborative Development Chef to help shape and enhance our Managed pub menus for a variety of customer audiences. Reporting to the Head of Food and working closely with the Kitchen Operations Manager, food procurement, and Pub Marketing teams, you will develop, cost, and specify new dishes that drive growth, deliver exceptional guest experiences, and keep us ahead of market trends.
Your expertise in food trends, seasonality, and regional provenance will guide your recommendations, leveraging guest feedback and market data. You’ll represent us at food and supplier shows and lead our own food events across the Managed Pub Estate. With strong skills in fish, shellfish, and butchery, you’ll work to develop our Head Chef Skills Academy and champion our chef apprenticeship program.

* Collaborative and creative with a commercial focus on food development.
* Proven experience in senior kitchen management or food development.
* Strong understanding of market trends, food seasonality, and regional provenance.
* Excellent communication skills to influence diverse stakeholders.
* Ability to manage multiple projects in fast-paced environments.
* Track record in menu planning, budgeting, and food safety.
* Inspiring leader committed to training and developing kitchen teams.
* Passionate about enhancing guest experiences in the hospitality sector.
