The Academy Sous Chef will work alongside the Academy Head Chef in providing food production services and kitchen operations in the Academy; the Centre for Food, Drink and Culture. They will support and guide kitchen teams and students to consistently deliver a quality, variety of food and menus on offer to customers to the agreed standards. The Sous Chef will assist in managing the operations of the kitchen in the absence of the Head Chef. - ABOUT YOU - - A levels, BTEC HNC in Professional Cookery, NVQ3, City & Guilds level 3 relevant to the post. - Extensive and relevant experience as a Junior Sous or Chef de Partie in a food and beverage setting, offering a range of high-end dining experiences, including restaurant and banqueting services. - Demonstrable experience of high-end kitchen operations, including personnel management, seasonal menu design, food planning and preparation, sanitation, health codes and security, as well as tracking stock levels of food, supplies, equipment, and forecasting needs.
