The Role:
This is an exciting opportunity for a skilled Assistant Night Baker to join our dynamic team in a vibrant, high-volume bakery. We are looking for someone experienced in producing a range of breads, including sourdough, baguettes, focaccia, brioche buns, and viennoiserie, who can thrive in a night-shift environment. This role involves supporting our bakery’s production demands, managing time effectively to maintain quality and consistency, and upholding the highest standards of cleanliness and food safety. This position is ideal for someone with strong technical knowledge and provides opportunities to further develop your craft in a supportive and inspiring setting.
Key Responsibilities:
* Assist in the preparation and baking of a variety of products, from sourdough and baguettes to brioche buns and viennoiserie.
* Plan and organise production to ensure quality, meet daily volume targets, and reduce wastage.
* Maintain a clean and orderly workspace, strictly following health, hygiene, and HACCP guidelines.
* Support inventory management by ordering, receiving, and stocking supplies as needed.
* Demonstrate strong baking knowledge, including dough preparation, folding techniques, and viennoiserie production.
* Collaborate with and mentor junior team members, fostering a positive and productive work environment.
* Adapt to a range of tasks, providing flexibility to meet the bakery’s evolving needs.
What You Will Bring:
* A minimum of two years experience as a Baker or Pastry Chef in a professional bakery or similar environment.
* A passion for artisanal baking with expertise in a variety of baking techniques and pastry production.
* Flexibility for night shifts and occasional adjustments to day shifts if required.
* Strong time management skills and the ability to work independently or within a close-knit team.
* An eye for detail and a commitment to maintaining high standards, even under pressure.
* Familiarity with food hygiene practices, safety regulations, and HACCP standards.
* Excellent organisational skills, with the ability to balance multiple tasks in a fast-paced environment.
