Role: Executive Chef
Operation: Luxury 4-Star Hotel
Location: Scottish Highlands
Salary: £60-80K (inc OTE & loyalty bonus)
Ellis Mack Recruitment is working with a Luxury 4-Star Hotel in the Scottish highlands .
This multi faceted operation combines luxury Hotel accommodation, a brasserie style operation and extensive conference & banqueting facilities. My client is looking for a career motivated Exec Chef to join this dynamic operator.
Duties/ Responsibilities:
Entire responsibility for the catering operation
delivering consistently high standards of menu, produce and dish presentation
Recruitment and training of junior members of staff.
Daily Stock Control ordering.
Input into all areas of kitchen management Inc. all KPI targets such as GP %, environmental health issues, menu design etc.
Skills/Experience:
Have Head Chef Experience in a similarly high quality operation.
Possess a passion and knowledge for food.
Drive & Self motivated. Excellent knowledge of kitchen related legislative requirements/audits.
Have shown loyalty and longevity throughout their career.
Have excellent planning and organisational skills.
Hold Appropriate professional qualifications for the role and have HACCP knowledge and experience.
