Salary: GBP33000 - GBP35000 per annum
Position: Head Chef Manager
Type: Permanent full-time role, working 07:00-15:00.
Location: A Care home based in Tunbridge Wells.
Key Responsibilities
1. Food
o Plan and implement a balanced and appealing rotational menu, using seasonal produce wherever possible.
o Liaise with local and national suppliers regarding the provision of quality and cost-effective products and services.
o Liaise with residents, their families, and nursing staff regarding specific likes, dislikes, and dietary needs, and maintain records.
o Check all stocks regularly, noting and reporting any discrepancies.
o Ensure that all store cupboards are clean and swept and that food is stored properly.
o Implement a robust cleaning schedule for all food service preparation and serving areas.
o Provide meals for staff where appropriate.
o Ensure all food is stored properly wrapped, labelled, and dated before being placed in freezers and store cupboards, using food in rotation.
o Be fully involved in planning and delivering ‘Special Events’.
o Liaise with administration to obtain an up-to-date list of residents’ birthdays, anniversaries, and celebrations, and prepare food accordingly.
2. Staff Responsibilities
o Plan staffing levels appropriately, including bank holidays and absence coverage, minimizing the use of agency staff.
o Oversee the day-to-day running of the kitchen and associated areas (serveries/dining rooms/room service).
o Ensure all kitchen staff attend mandatory training when invited.
o Maintain and train all staff, monitoring legal compliance.
o Supervise and help train junior staff in catering, washing up, and cleaning duties.
o Conduct staff appraisals and supervisions with the help of the General Manager if required.
o Ensure clean uniforms are always worn and that all kitchen staff comply with the uniform policy.
3. Cleaning
o Ensure that all staff leave the kitchen in a safe, clean condition at all times.
o Ensure that kitchen staff clear, clean, and wash up the kitchen, serveries, and dining rooms.
o Ensure all fridges are cleaned daily and defrosted at least twice monthly, recording temperatures twice daily in all areas.
o Ensure that the serveries and satellite kitchenettes on each floor are clean, supplies are replenished, and food in the fridges is clearly labelled and dated.
4. General
o Visit residents regularly to discuss their preferences, ensuring new residents are met as soon as practicable after admission to discuss their personal food and drink preferences and requirements.
o Review the meal service with residents regularly to ensure satisfaction with the food and service.
o Assist with functions related to the social calendar, ensuring adequate staffing for such occasions without using agency staff wherever possible.
o Ensure all relevant paperwork is current and readily available for inspection at any time.
o Exercise financial controls regarding all catering expenditure (food costs/labour costs) within the allocated budget.
o Provide senior management financial reports as requested.
o Participate in staff meetings and attend all mandatory training when required.
o Attend supervision and appraisals, ensuring pre-preparation as required.
o Attend any other training when a need has been identified.
o Communicate effectively with staff, residents, their families, and visitors in a professional manner, promoting a positive image.
o Ensure full compliance with the monthly kitchen audit.
o Ensure the appropriate HCA is maintaining the kitchen first aid box.
5. Other
o Undertake reasonable additional tasks as required and instructed by the General Manager.
o Be responsible for your own continuous professional development, including all mandatory training for the role.
o Take care of your own health and safety and that of others who may be affected by your actions at work.
o Co-operate with the management team and co-workers to help meet legal requirements related to health and safety, raising any specific queries or concerns.
