It goes without saying that the Head of Production Butchery will be dynamic and impactful and will have an impressive track record of butchery experience and commercial transformation to back you up. You will be setting out the philosophy, showing leadership, developing a team and innovating the processes whilst leading the day-to-day workings of our world-class butchery facility. This is a key role in our business, where you will manage a dedicated team across raw production, cured and cooked production, packaging, and hygiene. You will not only bring your deep knowledge of butchery and block work to the role, but also your ability to nurture, train, and lead your team to success. You will be a natural organiser, responsible for writing detailed production plans and schedules to meet the diverse requirements of our valued customers. Your strategic approach will ensure that stock levels are always accurate, and you’ll work closely with customers to guarantee the effective and efficient use of the whole carcass. Key Responsibilities Team Management : Lead, motivate, and manage a team of 9 across various production areas. Oversee team scheduling, welfare, recruitment, and HR processes. Stock & Supplier Management : Order stock, manage supplier relationships, and maintain optimal stock control. Production Planning : Develop and implement production schedules that align with customer needs and operational requirements. Customer Relations : Act as the key contact for customers, ensuring their needs are met and whole carcass utilisation is maximised. Carcass Utilisation/Wastage Management : Ensure the effective use of every part of the carcass, with a focus on reducing waste. Food Safety & HACCP : Maintain impeccable food safety standards, ensure HACCP protocols are followed, and record all necessary food safety documentation. Up to 30 days annual leave each year for our full-time team What we’re looking for Butchery Expertise : Strong background in butchery with experience in whole carcass breakdown and producing high-quality finished products in a time critical environment. Leadership : Proven ability to lead and organise a team efficiently. Production Planning : Expertise in creating and managing production schedules to meet deadlines and customer demands. New Product Development : Experience in developing innovative butchery products, especially in cured and cooked varieties. Food Safety : In-depth knowledge of food safety standards, with a comprehensive understanding of HACCP systems and compliance. Large-Scale Facility Experience : Experience running a large-scale butchery operation, with an advantage for those with charcuterie experience. HACCP Committee Experience : Ideally, you will have been involved in or managed HACCP committees. Customer-Facing Experience : Experience working with retail, restaurants, and direct-to-consumer meat sales. Workshops : Experience of designing and delivering butchery workshops to educate, entertain and delight hotel guests generating a valuable revenue stream for the business whilst marketing the Newt e-commerce offering to new customers. Where you'll be working The Newt Butchery is at the centre of our food production, sourcing beef, lamb and venison, direct from our farm, and pork and poultry from local farms. In June of 2023 the butchery department moved into a brand new state of the art facility, blending raw production, cured an cooked meat production and a visitor attraction hosting workshops and inspiring guests and customers with our nose to tail whole carcass butchery approach. Our aim is to become the leading whole carcass butchery operation in the country. Buying only whole carcass and using the whole animal. We supply our own internal customers from retail to various restaurants, giving us a unique opportunity to utilise everything we buy.
