Johnnie Walker Princes Street (JWPS) is the centre piece of a £185 million investment program to transform our Scotch whisky visitor experiences in the biggest concerted programme ever seen in Scotland’s whisky tourism sector. Aspiration
Diageo has a rich history of welcoming guests to our distilleries and giving them insight into the care and craft that goes into every single bottle of whisky we make. We are fortunate to have more distillery visitor centres than any other Scotch whisky producer and we have continually invested to grow and enhance our guest experiences. Almost a half million people visit annually to hear our founder stories, learn about flavour creation, and participate in curated tastings. As a result, consumers build an emotional connection with our brands, driving salience and supporting their growth. Distillery visitors feel they appreciate the product more after visiting, particularly through identifying the flavours, new ways of drinking and taking a multi-sensorial approach. 62% claim the distillery visit has made them think differently about whisky.
The goal for each distillery site (and for Johnnie Walker Princes Street) is to revolve around a unique theme that is authentic to the brand stories and enhances the site character and location. To this end, resources will be directed at enhancing the visitor experiences in service of theme, emotional engagement, increasing opportunities for revenue, and extending the brand connection well beyond the visit.
About the Role
The Food & Beverage Manager will be Johnnie Walker Princes Street’s hospitality expert, providing strong leadership, direction and vision across the venue and other Brand Homes as required. The postholder will be directly responsible for management of our bars & events at JW Princes Street and act as client in contract management of the catering partner. Alignment of these streams will be a key element of the role.
The food & Beverage Manager will be strategically accountable for the profitable growth of food and beverage & events and will have overall responsibility for the operational delivery and development of food and beverage products, ensuring offerings deliver high quality and customer experience, while growing in profitability and consistency.
The post-holder will also be responsible for health and safety, legal compliance, procurement and supply structures, and the development of these processes to ensure an operating platform that supports sustainable and competitive commercial activity across JWPS
Key responsibilities:
1. Anticipate visitor expectations and market trends and continually review business models and portfolio, product and service offerings to maximise customer experience and profitability.
2. Consistently demonstrate strong food & drink production and product creation capability and be accountable for raising food and beverage standards through championing flavour, production standards of food and drink offerings.
3. Be accountable for the development of operational strategies and delivery plans to ensure that the F&B business exceeds the targets for customer experience, operational delivery and business growth.
4. Overseeing all aspects of event management and smooth delivery of events, including the initial conceptualization, planning, event budget management and final execution.
5. Accountable for the Events department at Johnnie Walker Princes Street to achieve event sales targets and short, medium and long-term strategic business objectives
6. Oversee the development of imaginative menus, profitable pricing structures and processes to cater for diverse market segments, including groups, overseas visitors and connoisseurs. Ensure creative, innovative menus using fresh, seasonal, local and sustainable produce.
7. Raise the profile of JWPS, working with marketing team to identify and lead on F&B related campaigns, events and awards opportunities.
8. Oversee compliance with food safety, health and safety and other legislation. Introduce and embed procedures which will mitigate potential risks of non-compliance at an early stage.
9. Lead on alcohol licensing across all F&B, hospitality and retail operations. Oversee all associated training and accreditations; legal representation and legal compliance.
Leadership Responsibilities:
10. Lead the team by attracting, recruiting, training and appraising talented personnel.
11. Develop direct report staff, by empowering, supporting, encouraging and motivating.
12. Develop a staff training plan and supervise delivery of in house and external training; develop a ‘learning culture’ within the team.
13. Hold team meetings on a regular basis to communicate targets, aims and objectives, standards required, company and catering partner information.
14. Ensure labour establishments are in line with budgets.
15. Take accountability for team culture – seeking to achieve year on year improvement in team satisfaction - results of which are measured annually through an internal survey called Your Voice
Contract Management Responsibilities:
16. Maintain a proactive contract management approach to the catering operator, ensuring partnership development at all times.
17. Establish and monitor budgetary targets, service levels, KPI’s, schedules, policies and procedures.
18. Enforce adherence to legal requirements, industry and Diageo regulations and quality standards.
19. Ensure all records are maintained correctly and consistently by routine and spot checks.
20. Report routinely to senior management on key performance indicators including sales results, productivity, margin management and net profit achievement.
21. Ensure income is maximised through efficient purchasing, creative marketing and merchandising.
22. Ensure robust procurement practice in both financial and quality delivery, regularly monitoring suppliers and tendering contracts of scale.
Brand Homes Responsibilities:
23. Where required, Provide professional direction, guidance and support to Brand Homes in monitoring and delivering excellence in food and beverage service.
To be successful in this role you will need:
24. Degree level qualification or equivalent in a relevant discipline
25. Minimum of seven years’ senior management experience of F&B & events operations in fast paced & luxury environment.
26. Experience of working within a visitor experience/ brand home business is desirable.
27. A successful record of developing profitable F&B concepts including design, layout, point of sale and service.
28. Demonstrable experience of developing and improving a F&B & events business and delivering sustainable profitable growth.
29. Excellent written & verbal communication standards
30. Proven track record of working at pace, responding to sales performance, handling multiple priorities and consistently delivering against challenging budgets.
31. Practical experience, in a central role, in the management of EPOS within an operationally diverse F&B environment.
32. Strong influencing, negotiating and advocacy skills, with the ability to think analytically, independently and strategically; proven ability to develop strategy and fluently translate into operational success.
33. Experience in client contract management.
34. Expert knowledge of the international food and beverage market & events industry with a demonstrable passion for food & drinks products and ingredients including those with a Scottish emphasis.
35. Excellent knowledge of supply chain, supplier negotiation and health and safety.
36. Creative thinker with senior management business development experience, able to drive change and innovation, spot opportunities and exploit them.
37. Advanced H.A.C.C.P. certificate.
38. Advanced (Level 4) UK Food Hygiene certificate.
39. Personal Alcohol Licence Holder Licensing Act (Scotland) 2005.
40. Competent user of Microsoft Office products.
41. Foreign language skills are beneficial
