Position Summary This position will be responsible for supporting the self-prep Kitchen Manager and Mini-Farm Agriculture Director in a “Farm to Kitchen” operation. Duties include assisting the mini-farm program with ag and nutrition education and performance of a variety of kitchen-based food preparation duties other than cooking, such as prepping hot and cold foods for packaging of meal components. This job requires strict compliance with food safety and overall sanitary guidelines as directed in federal and state regulations as well as other safety and food and farm-related procedures set forth by the Kitchen Manager and Ag Director Essential functions: Assist Ag Director with childcare during ag and nutrition education classes - Provide support for Ag Director in regard to farm prep and maintenance - Assist with planting and harvesting of farm crops - Assist with prep of fresh farm product to be available for supplementing daily meals - Clean work areas, equipment, utensils, dishes, and silverware. - Store food in designated containers and storage areas to prevent spoilage. - Prepare a variety of foods according to supervisors' instructions, following approved procedures. - Ensure ingredients are tagged, date-labeled, covered, stored and rotated effectively.- - Portion, wrap and package the food in preparation for meal deliveries - Place food trays over food warmers for immediate service or store them in refrigerated storage cabinets. - Oversee food levels and restocking items on time. - Inform supervisors when supplies are getting low or equipment is not working properly. - Weigh or measure ingredients. - Assist Kitchen manager/Asst. Manager with various tasks as needed and provide cooks with needed items. - Wash and prepare food products for cooking or serving. - Receive and store food supplies, equipment, and utensils in refrigerators, cupboards, and other storage areas. - Stock cupboards and refrigerators - Remove trash and clean kitchen garbage containers. - Carry food supplies, equipment, and utensils to and from storage and work areas. - Scrape leftovers from dishes into garbage containers. - Stir and strain soups and sauces. - Keep records of the quantities of food used. - Load dishes, and other cooking and serving utensils into dishwashing machines. - Work on prep lines to assemble meal components Qualifications and Education Requirements Educational Requirement: High school degree or equivalent Two years’ experience working in a commercial kitchen is preferred, but not required Serve Safe certification (required within first 90 days of employment) Competencies/Skills/Experience: Excellent understanding of food preparation fundamentals. Sound understanding of food allergies and foodborne illnesses. Basic mathematical skills. Excellent communication skills, both written and verbal. Must possess a valid driver’s License for at least 3 years and no more than 5 points on driving record Working Conditions: Position requires occasional pushing of cart, bending, reaching and climbing Standing for prolonged periods of time Frequent light to moderate lifting 8 a.m.–2 p.m. Monday through Friday ((Hours may vary according to the production needs of the kitchen. Occasional evening or weekends may be required).
