To assist the Head Pastry on the successful running of the Pastry section.
Responsible for all areas of service, from ordering to food safety, food hygiene, and participating in the development of recipes for the Pastry section.
JOB OBJECTIVES:
1. To ensure consistency in quality and cooking of all dishes sent out, ensuring the team bakes and cooks produce according to the recipe, standards, and complying with food safety procedures.
2. To ensure that the pastry section has the appropriate mise en place for each service and that stock ordering is done daily.
3. To assist in ordering of produce, ingredients, etc. for the Pastry section.
4. Manage and maintain standard work practices and standard operating practices for all equipment.
5. To produce all pastry goods following recipes and guidelines set by the Head Pastry Chef.
6. To be able to train chefs and apprentices in relevant aspects of pastry.
7. To ensure a safe workplace by identifying hazards and taking corrective action.
8. To contribute to the menu by creating new and innovative dishes in line with the food style and quality that is reflective of the property.
9. To assist in writing recipes, update them when necessary, and ensure these are shared with the team.
10. To take responsibility for the training of junior team members.
11. To manage the Pastry section in an efficient, effective, and professional manner, maintaining staff morale and delivering on guests' expectations.
12. To motivate the Pastry team to work collectively and independently whilst nurturing creativity.
13. To ensure that the team understands, complies with, and follows the Company H+S policies and procedures at all times (Fire, Manual Handling, COSHH, First Aid, and Accident Reporting).
14. To ensure that the team understands, complies with, and follows the Company Food Safety policy and procedure.
Qualifications and Experience required:
1. Experience as a Junior/Sous Chef in a luxury restaurant environment.
2. Experienced in managing and leading a team.
3. Food Safety Level Three preferred.
