Established in 1997 as the first manufacturer of sushi for the UK supermarket industry, Taiko has evolved into the most innovative manufacturer of Sushi, Food To Go, Prepared Meals and Snacking products in the UK, supplying Waitrose, Tesco and Sainsbury’s to name a few. We are looking for a diligent and experienced Quality Controller to oversee the quality assurance processes in our warehouse. The Quality Controller will ensure that all products meet our stringent quality and safety standards. This role involves conducting inspections, monitoring storage conditions, implementing quality control procedures, and maintaining accurate records.
General Duties:
1. Conduct routine CCP checks and accurately document the results of the inspections and testing.
2. Monitor all other control points essential for traceability and record them correctly.
3. Monitor and ensure that the temperature of raw materials, components, and finished products are within spec during the process.
4. Check compliance with Food Safety and QA procedures, including control measures for Allergens.
5. Maintain all controlled document files and test records in a timely and accurate manner.
6. Check products against factory product specifications to ensure compliance with specifications and consistency in quality, reporting any out of specification.
7. Check that the interim cleaning procedures are strictly followed throughout the process, ensuring product lines are clean and free from allergen residues.
8. Quarantine any non-conforming product or equipment that may affect the final product quality or safety and report to Supervisor immediately.
9. Hand over the completed check sheets to the technical department for reviewing.
10. Be flexible to assist with other jobs within the Production Department as required.
11. Become Fire warden and First Aider when required.
12. Complete the start-up check sheet for Rice cooking area.
13. Monitor the cooking time, temperature, pH, and complete the CCP documents.
14. Conduct the pH meter calibration.
Shopfloor Condition:
* Working in cold area temperatures below 10C.
* Lifting and moving materials below 25kg.
* Products containing vegetable, fish, chicken, duck, and mayo and sesame seeds, etc.
