Shepherd Neame is excited to be recruiting for an Apprentice Commis Chef to join our team.
If you haven’t got any previous chef or hospitality experience please do not worry, so long as you possess some of the qualities outlined below, we can train you and teach you everything else that you will need to know.
Chefs working towards their Level 2 Commis Chef apprenticeship will learn and understand how to carry out the basic functions in every section with our training provider partner in their Commis Chef Academy. This learning gives chefs the opportunity to experience, consider and value each section of the kitchen with a view to choosing an area where they feel most inspired. As part of their apprenticeship journey, Level 2 Commis Chef apprentices will attend workshops and development days to boost your knowledge, skills and behaviours. Apprentices will have access to an online learning platform & portfolio system.
What will you do as an apprentice?
Duties will be mainly based in the kitchens and will include:
1. Food preparation - washing, cutting, portioning as instructed
2. Cooking of food and presenting to specification
3. Food rotation - being responsible for maintaining good food hygiene practices
4. Equipment preparation and cleaning - ensuring that all equipment is to food hygiene and kitchen standards
5. Kitchen cleaning - ensuring that the kitchen is maintained and cleaned as part of an ongoing standard
Previous catering experience would be beneficial however if you haven’t got experience, please do not worry, so long as you love food, are confident, motivated and are a great team player, we can train you and teach you everything else that you will need to know. Our training partners HIT Training will take you through your learning journey.

The Commis Chef Academy programme comprises of exciting master classes and workshops. You will be required to travel to a Training Kitchen as part of your learning journey. This will be either or
Apprentices spend time with industry experts, sharing ideas and boosting their understanding of key areas such as preparation and cooking, as well as flavour profiling, dish composition and seasonality. The workshops deliver content extracted from industry-recognised qualifications. Apprentices will have a coach assigned to them for 1-2-1 sessions at their place of work & for their progress reviews with their line manager.
What do we need from you?
17. The course Length is 12 months, plus up to 3 months for End Point Assessment
18. You will need at least 6 hours per week in paid hours to complete your off-the-job training (On & Off site)
19. You will need to attend training at the Chef Academy roughly every four to six weeks
What are my next steps once I complete my apprenticeship?
Once you have successfully completed this level 2 apprenticeship, you might be able to progress into a Senior Production or Chef De Partie role.
