Based at a private family-run estate in the South West of Scotland, the successful candidate will work directly with the Owner and Estate's General Manager to deliver high-standard culinary experiences for a diverse range of clients, including shooting, fishing, and golfing events, as well as weddings and TV and film locational shoots.
The ideal candidate will have a professional culinary background, be able to work independently, and possess strong organizational and communication skills. They will also have the ability to work flexibly, with an adjustable 40-hour week, and may be required to work on-site preparation or provide catering services for local events.
The estate has undergone significant investment, with a multi-million-pound investment plan, and is now starting to see revenue returns. The successful candidate will be part of a dynamic team, working to deliver exceptional hospitality experiences and contribute to the continued growth and success of the estate.
Key Responsibilities:
• Coordinate and deliver culinary projects, including breakfast, private dinners, and events
• Work with the Estate's General Manager to ensure seamless delivery of culinary experiences
• Develop and implement menus, recipes, and food presentation concepts
• Collaborate with gardeners to create soups, sauces, marmalades, and chutneys using produce from the estate's gardens
• Assist with the on-site cook school and provide training to estate staff
• Manage inventory, including food, equipment, and supplies, to ensure efficient and effective operations
• Maintain high standards of food safety, quality, and presentation
Requirements:
• Professional culinary training and certification
• Min. 2 years of experience in a professional kitchen, preferably in a similar role
• Ability to work independently, with minimal supervision, and as part of a team
• Strong organizational and communication skills
• Flexibility to work variable hours, including evenings and weekends, and occasional overnight stays on-site
• Own transport is desirable, but not essential
