Responsible for: To maintain a high standard of operational hygiene in all kitchen areas in compliance with Hotel & Hygiene Regulations.
Job Description:
1. Complete HACCP checklist.
2. Clean fridges, ovens, food mixers, and food stores.
3. Maintain pot wash and surrounding areas.
4. Manage rubbish skip areas.
5. Ensure hygiene in kitchen and storage areas.
6. Empty all bins, refuse sacks, and boxes as required.
7. Arrive for work on time, wearing a full clean uniform as per hotel standard and appropriate PPE.
8. Maintain a high level of personal hygiene throughout the duty shift.
9. Carry out cleaning duties as outlined in the cleaning schedule and complete daily/weekly cleaning checklists.
10. Clean pots, pans, and equipment as required, ensuring they are stored correctly and neatly.
11. Report any damaged equipment to the head chef and/or manager on duty.
12. Empty bins when full or as requested.
13. Conduct thorough deep cleaning of kitchen/larder areas, equipment, and storage areas as per schedule.
14. Wear relevant protective clothing when handling hazardous materials (e.g., rubber gloves, face masks).
15. Attend training sessions/meetings as required.
16. Report any damaged/defective equipment to the Senior Chef on duty.
17. Maintain a safe, hygienic, healthy, and hazard-free working environment.
18. Comply with company policy regarding fire, health & safety, hygiene, food hygiene, and security.
19. Understand responsibilities outlined in the Health and Safety Statement and Staff Handbook.
20. Assist in the kitchen at the request of the Senior Chef on duty.
