Description We are currently recruiting for an experienced Banqueting Head Chef to join our award winning kitchen brigade at the Sheraton Grand Hotel & Spa. Sheraton Grand Hotel & Spa is one of Scotland's leading 5 star hotels. As the largest 5 star hotel in Edinburgh, we also have the biggest banqueting and meeting facilities of any hotel in the city with a capacity of up to 500, as well as the Rosette-winning One Square Bar Brasserie. Role: Our Banqueting Head Chef is required to work in our diverse kitchen that serves a variety of events from gala dinners to corporate conferences, weddings and more; all under the guidance of our Executive Chef. Our banqueting facilities are the largest in the city within a hotel and our Edinburgh suite regular serves seated dinners of up to 500 guests. As with the One Square outlets, utilising Scotland’s best seasonal produce is at the heart of what we do. We source locally, and have a foundation in reducing our food waste and improving our sustainability actions. We combine contemporary flavours with traditional techniques whilst using only ingredients of the finest quality. As Banqueting Head Chef you will be required to lead the banqueting team in the kitchen, ensuring it is fully prepared for service times whilst also controlling the other chefs working on it. Alongside the Executive Chef you will strategically plan for the future of event catering at the Sheraton, designing menus and driving excellence within the team. Requirements: We are looking for someone who is ready to take the next step on your career path. Ideally you will have at least 4 years’ experience within a high-end 1 or 2 rosette kitchen environments, including experience in high-volume banqueting operations. Our expectations of you will be that you are able to work on your own initiative as well as part of a team and have a strong desire to improve on your skills and knowledge as well as: Have experience with banqueting volume (min 300) Have experience in working in a multi outlet kitchen operation. Assess quality control and adhere to service standards. Lead and support the junior members of the team Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage, sanitation, sustainability and allergens. Adaptability to learn all menu items, their recipes, methods of production and presentation standards, as well as the creativity to design menus. Support the control of food cost. Carry out close liaison with all section of the kitchen in order to ensure smooth and efficient service. Ability to produce own work in accordance with a deadline and to assist and encourage others in achieving this aim. Seek own solutions to obstacles that occur from time to time. To project a pleasant and positive professional image to all stakeholders at all times. Complete appraisals to set timescales. Managing the kitchen P&L, kitchen related KPI’s and audit standards. Menu planning and direction. Manage the kitchen team, through department rota’s, training and communication meetings. Strong liaison with the other Heads of department within the kitchen team; building relationships and professional communication will be key.
