We are looking for an experienced Catering SME to join our Justice & Immigration (J & I) Business Unit (BU), where we produce around 5–6 million meals a year across 8 contractual sites. The procurement spend on food and consumables is considerable. Whilst not site-based, this management position will provide oversight and subject matter expertise across our broad geographical footprint of contracts in the UK across all J & I Business Units.
As the subject matter expert for the business, you will report into the General Manager for Catering, a large part of the role is supporting mobilisation in the event of contract awards.
You will be expected to deliver on accountabilities such as:
1. Drive standardisation across the BU, focusing on menus, consolidation of products and suppliers, and stock management.
2. Planning and costing menus in consultation with catering teams and consumers in compliance with all relevant regulations, ensuring these are efficient and are effectively implemented.
3. Keeping abreast of trends and developments in the catering industry such as menus, consumer tastes, and management issues.
4. Assisting in the annual FSMS audit program, along with maintaining standards and ensuring policies are implemented correctly.
What you’ll need to do the role
Qualifications (Essential)
1. Level 4/Advance Food Safety (valid within 5 years or evidence of refresher)
2. Level 4/Advanced qualification in HACCP (valid within 5 years or evidence of refresher)
3. Qualification or training in internal auditing, principles, and practices
Knowledge/Experience
1. Food safety risk, identification and management, HACCP and prerequisite controls ISO standards and accreditation
2. Ideally, experience within a custodial setting
3. Auditing experience against management systems within the food environment
4. Working horizontally across a business providing a supporting function
5. Experience of management of large annual budgets and contract catering management
You must be flexible to work additional hours to meet project deadlines and will be expected to travel and work away from home where needed.
