We are seeking a dedicated and passionate Baker and Viennoiserie Specialist to join our skilled culinary team. The ideal candidate will be responsible for creating high-quality baked goods, artisan breads, and a range of viennoiseries to delight our discerning members and guests. This role is perfect for someone who thrives in a collaborative, creative environment and has a passion for showcasing baking techniques.,
* Prepare and bake a wide variety of products including artisan breads, croissants, brioche, danishes, and other viennoiseries to the highest standards.
* Experiment with recipes to develop unique offerings that reflect the seasonal and regional ethos of Skibo Castle.
* Ensure all baked goods meet the aesthetic and quality expectations of The Carnegie Club.
* Maintain consistent portion control and presentation standards.
* Manage daily production schedules to ensure freshly baked goods are available for breakfast, afternoon tea, and other dining occasions.
* Coordinate with the Head Chef and Pastry Chef to plan menus and special event offerings.
* Adhere to all health and safety regulations, maintaining cleanliness and organisation in the bakery.
* Ensure proper storage and handling of all ingredients.
* Work closely with other kitchen staff to ensure smooth and efficient service.
* Mentor junior team members, providing guidance on techniques and best practices.
Proven experience as a Baker, preferably in a luxury hospitality or fine dining setting.
* Expertise in crafting viennoiseries and artisan breads, with a strong understanding of fermentation and lamination techniques.
* Formal culinary or baking qualifications are highly desirable.
* Creative flair with a passion for innovation and quality.
* Excellent organisational and time-management skills.
* Strong knowledge of food safety and hygiene regulations.
