Our flagship hotel is on the brink of a bold new era. Its Grade
II-listed building on the cusp of Park Lane has been sensitively refreshed by
architects Holland Harvey. Interiors are being rejuvenated by Studio Mica and
Studio Est. We have added a new signature restaurant helmed by a world-famous
chef, alongside a dapper lounge and bar. Communal areas, bedrooms and suites
have all been artfully redesigned; our spa and Grand Ballroom will re-emerge as
modern icons.

Overview
Montcalm Mayfairis looking for a skilled and ambitious Food & Beverage
Controller to join our team. You will play a pivotal role in
maximising the profitability and efficiency of a high-end dining operation
while maintaining the quality experience expected in a luxury five-star
environment.
Help to

trusted ambassador for one of our hotels, where you will be responsible for
managing all F&B outlets food and beverage control systems, which includes inventory, procurement, menu pricing and maintaining cost
targets.

Key Responsibilities
·
Monitor and analyse food and beverage costs to
ensure they are aligned with the budget and profitability goals.
·
Develop and maintain an efficient inventory
control system, including tracking food and beverage supplies, minimising waste
and controlling overstocking.
·
Collaborate with chefs, managers and procurement
teams to optimise the cost of goods sold (COGS) through effective purchasing
and inventory management strategies.
·
Perform regular inventory counts of food and
beverages and supplies, ensuring that all items are accounted for and stored
properly.
·
Manager stock rotation and avoid product
expiration through effective stock management.
·
Ensure that physical inventories are accurate
and reconcile discrepancies.
·
Work closely with the purchasing department to
ensure timely and accurate delivery of goods.
·
Monitor vendor performance to ensure product
quality and compliance with hotel standards.
·
Collaborate with the Head Chef and F&B Teams
to evaluate menu items and ansure that costing is accurate and aligned with
profitability goals.
·
Propose pricing strategies for food and beverage
menus based on cost analysis, competition and market demand.
·
Monitor the impact of menu changes on food and
beverage costs.
·
Prepare detailed financial reports including
food and beverage cost breakdowns, variance reports and budget forecasts for
the F&B department.
·
Provide recommendations to improve profitability
based on financial analysis, cost trends and market conditions.
·
Report on waste and suggest measures for
improvement.
·
Ensure compliance with health & Safety and
sanitation regulations, as well as hotel policies regarding food storage and
handling.
·
Maintain thorough documentation of all inventory
and cost control processes for annual audits and compliance reviews.
·
Implement measures to ensure minimal food and
beverage loss through wastage or theft.
·
Work closely with the Head Chef and restaurant
managers and finance team to ensure smooth operations and cost control.
·
Train and educate team members on cost-saving
practices, portion control and stock management.
·
Respond to emergency situations calmly
and efficiently, following hotel protocols.
This job description is

Essential Qualifications
·
Batchelor’s degree in Hospitality
Management, Finance, Business Administration, or related field preferred.
·
Minimum of 2 years’ experience in food
and beverage control or a related role withing a hotel.
