We are looking for a highly motivated professional Sommelier to join our Restaurants and Bars team at The Barnsdale.

You will:
* Lead by example, train and motivate team to achieve service standards of excellence and product knowledge in each of the restaurants.
* Maximize customer focus during every service by being present on the floor, ensuring that our guests are receiving the best possible experience
* Create and update the Wine List in collaboration with the Bars Manager & Head of Wine
* Recommend food and wine pairings
* Advise guests on wines based on their personal tastes and food choices.
* Inform guests about different varieties of wines and prices
* Ensure wines are served at the right temperature and within proper glassware
* Ensure wines are stored correctly
* Manage wine cellar and ensure it is kept fully stocked.
* Plan and organise wine tasting sessions for team members and guests
* Ensure that our team members are trained to the Company standard allowing them to provide all our guests with service standards of excellence.
* Motivate team members through incentives and competitions to maximize sales in collaboration with the Head of Wine and Bars Manager
* Promote our key brand’s stories and monitor sales tracks to increase sales and promote where necessary.
* Stay up to date with menu knowledge and any menu changes in readiness to inform our guests and the team. Work with the kitchen to devise upselling strategies and food pairings
* Participate in the creation of Wine lists, Event Menus and the drinks offering. Liaise with suppliers and distributors to achieve best possible pricing and incentives.
* Perform Weekly, Monthly wine stock takes
* Minimize stock and equipment losses through vigilance and implementing systems.
* Daily set ups and closes are done correctly, and any financial, structural or operational discrepancies are reported immediately or acted upon.
* Develop excellent knowledge of any systems used inc, Resdiary, Fourth Inventory etc to maximize efficiencies.
* Ensure excellent communication between team and other departments to ensure a memorable guest experience
* Ensure all deliveries are accurate and any discrepancies are recorded, and suppliers/accounts notified immediately
* Maintain the condition of wine, minimizing wastage and recording accurately when it happens
* Promote daily communication with the restaurant and kitchen teams through daily briefings
* Keep up to date with licensing legislation, liaising with the authorities and take legal responsibility for the sale of alcohol. Ensure the refusals log is up to date and filled in.
