Assistant Head Cook FT (Mon-Fri) 3:00 am - 1:00 pm (shift times may vary) $21.00 per hour (health benefits package including paid vacation/sick time) Location: Modern Maturity Center, Dover, DE, 19904 ESSENTIAL DUTIES AND RESPONSIBILITIES : Opens the kitchen at the beginning of the workday. Readies the kitchen for daily operation. Ensures that food is prepared correctly, on time, and at safe temperatures. Follows recipes, reads menu to prepare food; estimates food requirements and procures food from storage Ensure correct production of menu items Adjusts thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettle Measures and mixes ingredients according to receipe to prepare soups, salads, gravies, desserts, sauces, and casseroles Bakes, roasts, broils, and steams meats, fish, vegetables, and other foods Adds seasoning to foods during mixing or cooking Observes and tests foods being cooked by tasking, smelling, and taking temperature Washes, peels, cuts, and shreds vegetables, and fruits to prepare them for use Cuts, trims, and bones meat prior to cooking Adheres to health, sanitary and safety regulations Ensures maintenance of a clean and sanitary kitchen Assists the Kitchen Manager in menu planning Other duties as assigned COMPETENCY : Follows policies and procedures Is consistently at work and on time Meets productivity standards Observes safety and security procedures Uses equipment and materials properly REQUIREMENTS: ServSafe certification preferred Must pass a criminal background check Some supervisory experience EDUCATION/EXPERIENCE : Certificate from college or technical school, six months to one-year related experience and/or training, or equivalent combination of education and experience SUPERVISORY RESPONSIBILITIES: Monitors the action, productivity and safety of the cook team.
