Head of Food & Beverage - Saga Cruise
Salary: £70,000 to £80,000 depending on experience

Saga Cruise is excited to appoint a newly created role in the Hotel Operations team: Head of Food & Beverage Operations. In this role, you will support the Hotel Operations Director to deliver a first-class hotel operation to our guests. You'll be integral to ensuring that each and every one of our guests experiences the Saga high standards of quality and service that they've come to expect from us. You'll be responsible for planning, implementing, and supervising our high-quality standards and making sure that we retain our reputation for providing the best F & B service onboard our Boutique cruise ships.
The ideal candidate will have a 'hands-on' and 'make it happen' approach and will be passionate about the Saga brand.
We work in a hybrid way at Saga, both at home and in the office. The nature of responsibility with this role means you will need to be flexible and able to travel overseas when necessary.
Role Responsibility
* Work closely with the Hotel Operations Director to establish SOPs within the on-board Food and Beverage operation.
* Ensure the Key Messages of the Saga Vision, Purpose, and Values are upheld and enforced within the Food and Beverage team onboard.
* Budget management and review for Food and Beverage operations on all our vessels, ensuring that the budget is set realistically and reviewed regularly.
* Manage all menu writing, innovations, and changes to the Food and Beverage Operation.
* Plan new concepts in all Food and Beverage outlets.
* Drive consistency on all vessels to ensure that high standards are always met.
* Ensure consistency with all menu rotations.
* Work closely with the Head of Procurement to ensure new products within the Food and Beverage department are of high standards.
* Plan and implement new initiatives within the Food and Beverage Operation that drive service excellence for our guests and positively impact our revenue.
* Develop and maintain a good working relationship with external third parties, including international health, hygiene, and food safety organisations (i.e., US CDC USPHS, CHP, ShipSan), ensuring that all our hotels meet the standards required by these organisations.
* Develop strong relationships with partners, the broader Cruising team, and the wider business to ensure our hotel operations needs are being met.
* Keep abreast of industry trends and developments in Food and Beverage operations, maintaining and developing a strong network of external contacts and making recommendations for positive change as required.
* Ensure the delivery of high-performing, efficient, and regulatory compliant operations and drive customer service arrangements that deliver excellence and enhance the Saga brand.
* Create a culture within which all fully understand the need for exceptional customer care and service and inspire full commitment to The Saga Way by making customer care and operational excellence central to our core DNA.
* Create a culture and environment of improvement, within the constraints of legislation, regulation, and meeting guest needs and expectations.
* Promote excellent performance management practices, ensuring targets are achieved and services are consistently excellent, encouraging all employees to deliver to their best.
* Provide clear direction, guidance, and support to your direct reports, ensuring timely performance reviews are held in line with current HR practices.
* Ensure that job descriptions and formats for the Food and Beverage personnel are updated and available.
* Support and create the par stock level within hotel operations to reflect the correct financial requirements for the business.
* Direct and support a strong fleet-wide training programme.
* Conduct regular ship visits to enforce company policies and practices and, when required, conduct ship and shore audits.
The Ideal Candidate
You will already be a credible leader in a Food and Beverage Operational role. Someone who is passionate about high-level service and fine dining experiences. You should have a natural leadership style that inspires and motivates a remote workforce. Candidates will need to demonstrate the following skills and experience from their career so far:
* A talented senior manager, with a proven track record of working in the Hotel/Food and Beverage sector.
* A proven track record of working in Health and Hygiene/Environmental management.
* Demonstrable experience in budget management.
* Strong stakeholder management and influencing skills.
* Externally referenced and focused on continuously seeking professional development to ensure that Saga's approach to Health and Hygiene remains relevant and future-proof.
* Project management experience preferred.
* Demonstrable experience in developing business proposals and presenting at a senior level.
* Strong commerciality and business acumen.
* Hands-on training background.
* Audit experience.
* Excellent communication and negotiation skills.
* Demonstrable IT proficiency (MXP preferred, Microsoft Office essential).
Education and Qualifications:
* Relevant business-related degree preferred, or qualified by experience.
