Summary of job description:
• Prepare and present traditional Sri Lankan desserts and sweets such as coconut cake (bibikkam), watalappan, caramel pudding, juggery pudding, srilankan style chocolate gatue, srilankan style wedding/Christmas cake, Sri Lankan style love cake. wanduappa, kiri toffee, kavum, kokis, and halapa ,kaludodol.
• Identify and source authentic ingredients, including jaggery, coconut, rice flour, and spices, ensuring quality and freshness.
• Follow traditional recipes while adapting to modern presentation techniques to enhance customer appeal.
• Maintain consistent taste, texture, and presentation standards for all dessert offerings.
• Manage dessert preparation efficiently, coordinating with other chefs and staff to ensure timely service.
• Experiment with and develop new dessert ideas that blend tradition with contemporary preferences.
• Adhere to food hygiene and safety regulations in the preparation and storage of desserts. Occasionally interact with customers to understand preferences and incorporate feedback into the menu.
Qualifications
• Experience:
o A minimum of 3 years of hands-on experience in in preparing traditional Sri Lankan desserts and sweets, with a proven track record of excellence in maintaining authenticity and quality
o Previous work experience in a Sri Lankan hotel or bakery, providing an in-depth understanding of authentic Sri Lankan culinary standards.
• Culinary Expertise:
o Mastery in crafting iconic Sri Lankan desserts such as coconut cake (bibikkam), watalappan, caramel pudding, jaggery pudding, Sri Lankan-style chocolate gâteau, wedding/Christmas cakes, love cakes, wanduappa, kiri toffee, kavum, kokis, halapa, and kaludodol.
o Sound knowledge of traditional recipes and cooking techniques, with the ability to ensure consistency in taste, texture, and presentation.
• Versatility:
o Demonstrated ability to excel in preparing Sri Lankan main meals alongside desserts, showcasing a comprehensive culinary repertoire.
• Ingredient Knowledge:
• Expertise in sourcing and using authentic Sri Lankan ingredients, including jaggery, coconut, rice flour, and a variety of spices, to maintain cultural authenticity in flavors.
• Recipe Innovation and Presentation:
o Creativity in adapting traditional recipes with modern presentation techniques to appeal to contemporary customer preferences.
