We’re seeking a chef with a passion for quality and creative cuisine to join the kitchen at Domaine Chandon as our Commis Chef. Under the guidance of our Executive Chef, you will assist in delivering a high-quality menu, highlighting our local and seasonal Australian produce and the portfolio of Chandon wines. This role includes work on weekends and public holidays.
Reporting directly to the Executive Chef, duties of this position include:
1. Consistently prepare dishes to a high level of quality and presentation.
2. Ensure kitchen mise en place is complete prior to daily service.
3. Knowledgeable and competent on all facets of the kitchen, including hot, cold, larder, and pastry.
4. Liaise regularly with front-of-house staff to communicate availability of menu items, provenance, and allergens.
5. Uphold a high standard of hygiene and cleanliness in the kitchen and storage areas.
6. Ensure stock is rotated and waste is minimised.
7. Assist the Executive Chef and Sous Chef in achieving kitchen KPIs.
8. Maintain the kitchen in a clean and tidy state through general cleaning of kitchen, equipment, and dishes where required.
