Responsible for: To maintain a high standard of operational hygiene in all kitchen areas in compliance with Hotel & Hygiene Regulations.
Job Description:
* Complete HACCP checklist.
* Clean fridges, ovens, food mixers, and food stores.
* Maintain pot wash and surrounding areas.
* Manage rubbish skip areas.
* Ensure hygiene in kitchen and storage areas.
* Empty all bins, refuse sacks, and boxes as needed.
* Arrive for work on time, wearing a clean uniform per hotel standards and appropriate PPE.
* Maintain high personal hygiene (e.g., change aprons/hats as required) throughout the shift.
* Carry out cleaning duties as outlined in the cleaning schedule and complete daily/weekly cleaning checklists.
* Clean pots, pans, and equipment as required, ensuring proper and neat storage.
* Report any damaged equipment to the head chef and/or manager on duty.
* Empty bins when full or as requested.
* Perform thorough deep cleaning of kitchen/larder areas, equipment, and storage areas as per schedule.
* Wear relevant protective clothing when handling hazardous materials (e.g., rubber gloves, face masks).
* Attend training sessions and meetings as required.
* Report any damaged or defective equipment to the Senior Chef on duty.
* Ensure that areas of responsibility are maintained in a safe, hygienic, healthy, and hazard-free manner.
* Comply with company policy regarding fire, health & safety, hygiene, food hygiene, and security.
* Understand responsibilities outlined in the Health and Safety Statement and Staff Handbook.
* Assist in the kitchen at the request of the Senior Chef on Duty.
