What is the Restaurant Manager position?
The Restaurant Manager role at its heart is a service position dedicated to excellence. They are an integral part of the team that ensures a memorable experience for our guests. The Restaurant Manager helps assures that our guests have a memorable experience by maintaining service standards, ensures that the Front of House team has their tools for success, and contributing to the positive company culture. Service is an integral piece of our guest experience and the leadership team the guardians of our service standards. You are the eyes and ears of the restaurant; you may not have a specific section to run so you are the person in charge of overseeing all aspects and always being alert and anticipating a guest’s needs. Hear a knife drop? Find the person who needs another knife and bring it without hesitation. You are the key problem solver, the solution maker.
Roles & Responsibilities
Environment and Presence
Assuring that the restaurant is beautifully presentable to guests and that all cleaning has been performed. Maintaining the Milk Beach environment and its unique feel is a key factor in our success and is a responsibility for us all.
* Guest Satisfaction – ensuring that the Milk Beach mantra is upheld at all times – ‘to improve every guest’s day’ – and that this mantra is consistently reinforced to all staff members and forms a central part of the culture for the team
* Aussie service style – in line with the concept of a neighbourhood Australian restaurant, the RM must ensure the team delivers a high standard of product knowledge in a relaxed Aussie environment – is reinforced, maintained, and always improved on
* Organisation – ensuring there is a strong plan for every single service, that there is an optimum team on every shift to deliver the standard of service expected; that each team member has a clear role defined; that all of the tools, equipment and systems required for a smooth service are available for each team member to perform their role
* Communication – clear communication to FOH and BOH teams of the service plan, team member roles, guest information, products, upselling strategies, and any other important information required for a successful service
Service
* Pre-shift Briefings will be performed by the Restaurant Manager when the GM/AGM is not on duty or at request by request. This includes communication with Chef and Bar Manager for understanding of the details of that shift’s service.
* Adhering to the Steps of Service and making it second nature within the FOH team
* Assuring a consistency of attitude/behaviour towards every single table is warm, welcoming, and enthusiastic about Milk Beach.
* Ensuring that all opening and closing cleaning/maintenance duties are performed properly.
* Double checking that the tools needed for service are available to the teams. This may be consumables, drinks, or food items. If something is missing, a manager should be immediately informed.
Team Development and Leadership
The Restaurant Manager is vital to their team’s development, career satisfaction, and continued enthusiasm. They are tasked with observing and building key performance measures for their colleagues. They work as mentor, teacher and coach.
Trainings
The Restaurant Manager is the hands-on person for all these service training related. They are responsible for building small trainings centred on service and foods knowledge. The purpose of these trainings is to develop the standards of our team. The trainings should be scheduled in monthly rotation, and topics shared with the team in fortnightly bulletins. The Restaurant Manager works as both strategist and instructor.
