HMP & YOI Doncaster
Full time – hours per week

Main Purpose:
To provide and carry out catering services within HMP Doncaster in accordance with all relevant and current regulations, legislation, and guidelines.
Main Accountabilities:
1. To work with the Catering Manager and Catering team in the delivery of catering services to the whole establishment and comply with all relevant Health & Safety and Food Safety Regulations, legislation, and company guidelines & operational procedures.
2. To organise, supervise and provide varied and healthy meals for prisoners to include special diets, special events and religious events. Keeping abreast of changing trends and developments in the catering industry such as menus, consumer tastes, seasonal variations etc.
3. Deputise for the Head Chef/ Team Leader in their absence when required to do so and lead the catering provision.
4. To ensure maintenance checks of equipment and infrastructure are completed and that all equipment is fit for purpose and use and to report defects to Facilities Management on correct forms (CF-) and to report said defects to the head chef and Catering Manager
5. To provide meals with a hot or cold drink outside normal mealtimes if the prisoner has missed the meal through no fault of their own.
6. To ensure the security and food safety of all foodstuffs is maintained during delivery, storage and distribution within the kitchen area.
7. To record and document all relevant paperwork to comply with food hygiene regulations, Health & Safety, HACCP and Company Policies
8. To provide training and supervision to kitchen workers and any prisoners involved in food production or service.
9. To perform random Quality Checks at food service points before, during and after mealtimes.
10. Reacting to complaint issues and trends, with a cohesive approach along with the catering team.
11. To work shift work and weekends when operationally required.
12. To assist in prisoner movements and searches to and from the kitchen.
13. To train for and carry out any other work reasonably acceptable within the capabilities of the post holder.
What you will need for the role:
14. A strong commitment to the rehabilitation of prisoners.
15. Working in a people centered environment with experience of working effectively in a socially diverse environment, with a good team ethic.
16. Good working knowledge of a large catering operation, ideally with a minimum of 3 years’ experience in a similar post preferably within a custodial environment
17. Good supervisory skills with strong interpersonal skills, including good oral and written communication.
18. Excellent time management
19. Basic computer skills including knowledge of Excel, Word, and Outlook applications.
20. Able to demonstrate resilience with a basic understanding of both conflict resolution and de-escalation and risk and conflict management.
21. Assertive, creative, and progressive along with good problem-solving skills.
Essential Qualifications:
22. Literacy and Numeracy Level 2 or equivalent GCSE.
23. Level 2- Food Safety*
24. Level 2- Hazard Analysis and Critical Control Point (HACCP)*
25. Awareness of Allergen Control within Catering*
26. Level 2- First Aid at Work
27. *Level 2 Qualification in Food Safety & HACCP required to be completed during initial probation period.
28. *Level 2 Qualification in Allergens in Catering required to be completed during initial probation period.
29. *Level 2 Qualification in First Aid at Work required to be completed during initial probation period.
Desirable:
30. City & Guilds /1 & 2 or equivalent NVQ or similar in Food preparation and Production
31. Level 2- Food Safety
32. Level 2- Hazard Analysis and Critical Control Point (HACCP)
33. Level 2- Allergens in Catering
34. Level 2- HSE
