Based at our site in Glenbervie or you can be based at our Midlands site if this is your preferred choice. You will work Monday to Friday reporting into our Bakery Product Manager. You will play a crucial role in developing and optimizing recipes and processes to achieve high-quality products, focusing on New Product Development (NPD) and Existing Product Development (EPD). You will also oversee factory trial design criteria, monitoring, reporting, and testing,
* Identify risks and uncertainties, providing actionable recommendations.
* Ensure compliance with legislative guidelines on functional raw materials.
* Utilize knowledge of HACCP and food safety protocols.
* Leverage understanding of functional ingredients (raising agents, emulsifiers, improvers, enzymes) for product enhancement.
* Apply enzyme technology in bakery applications, ensuring optimal use and results.
* Develop and base compound products in categories like concentrated product formats, 'all-in-one' powder mixes, and wet compounds.
* Manage projects, ensuring recipes are developed within controlled costs, agreed timelines, and design specifications.
* Communicate effectively and work both independently and as part of a cross-functional team.
* Lead the NPD process, particularly for powder products, and monitor project progress.
* Requisition ingredient samples and liaise with pilot operatives regarding materials and processing conditions.
* Maintain accurate records of all recipes, tests, and results.
* Coordinate with customers to assist in project completion and understand their specific requirements.
* Raise specifications and technical data sheets as needed.
* Collaborate with purchasing, stock control, production, and QC departments for factory trials.
* Liaise with suppliers for new or alternative raw materials.

You will have a natural aptitude for problem solving and a first-class ability for planning, organising and communicating., A degree in Food Processing, Food Science, Food Technology, Chemistry, Biochemistry, or a related field.
