Bar Operations:
1. Complete opening procedures at the start of the shift, ensuring the bar is fully ready for service by opening time.
2. Ensure the bar is ready for peak periods, with all stations set up, fully stocked appropriately and batch recipes prepared as needed (if required).
3. Inform the manager of any unavailable items or issues that arise during service.
4. Maintain a tidy and organized workspace throughout the shift, adhering to cleanliness standards.
5. Perform end-of-shift close down duties, including cleaning all utensils, coffee machine, glass washer, stocking up, dating and organizing the bar area.
6. Follow FIFO (First In, First Out) and proper labeling procedures for refrigerated/opened items.
7. Complete daily checklists and comply with site policies and procedures.
Product Knowledge:
1. Have full knowledge of all beverages, including wines, cocktails, and other drinks.
2. Understand and properly use all bar equipment, from coffee machines to cocktail tools.
3. Be aware of allergen information for each menu item and ensure guests are informed if needed.
4. Prepare cocktails and hot beverages to the company’s set standards and recipes.
5. Adhere to the company’s Health and Safety Policy and maintain confidentiality where required.
Service Standards:
1. Maintain proper stock rotation and ensure stock security, reporting any missing items immediately.
2. Log all wastage and report any issues with stock to the Head bartender or upper management.
3. Never leave the bar unattended, and treat the bar’s stock responsibly, maintaining its integrity.
