We are looking for a Bar Manager to help shape and lead a new bar concept dedicated to sustainability, community, and creativity. This is an exciting opportunity to be at the forefront of a venue that values hyper-local ingredients, innovative mixology, natural wine, and environmental responsibility.
We’re not just opening a bar—we’re building Holy Water Stroud, a Balearic-inspired listening bar and so much more. The venue will include a herb garden, a three-bedroom hotel and members’ bar, and a deep-rooted commitment to craft, music, and local connection. A slow-drinking, slow-living haven shaped by the seasons, where fermentation, foraging, and collaboration with local artisans form the heart of our drinks philosophy.
You’ll be working alongside award-winning bartender Adam McVay, founder of the acclaimed events company We Are Holy Water—a globally recognised leader in creative, sustainable drinks for events and weddings.

What You’ll Be Doing:
* Sustainable Menu Development: Designing a unique drinks program that showcases seasonal, foraged, fermented, and locally sourced ingredients.
* Canned & Bottled Range Development: Leading the creation of a distinctive range of seasonal, foraged, fermented, and locally sourced drinks—translating our existing bar menu and drinks portfolio into beautifully crafted canned and bottled offerings, including non-alcoholic options, sipping drinks, spritzes, and low-intervention collaborations.
* Leadership & Team Building: Creating an inspiring and inclusive culture, mentoring staff, and fostering collaboration.
* Operational Excellence: Overseeing inventory, cost management, and ethical sourcing with a focus on minimising waste and maximising impact.
* Community & Event Engagement: Building strong relationships with local producers, organising tastings, workshops, and music-led gatherings.
* Events & Product Development: Collaborating on our wider events company and contributing to the development of our seasonal drinks portfolio—including carbonated cans, bottles, sipping drinks, and non-alcoholic offerings.
* Hotel & Members’ Experience: Contributing to the guest experience across the accommodation and exclusive members' space, offering a seamless, elevated hospitality experience.
What We’re Looking For:
* A deep commitment to sustainability, low-intervention methods, and local sourcing within hospitality.
* Proven experience in bar management, mixology, wine service and drinks development—ideally within innovative or independent venues.
* Strong leadership skills, with a collaborative and nurturing approach to building and inspiring teams.
* Creativity and vision to craft an ethical, forward-thinking drinks program that reflects the rhythm of the seasons and the stories of the land.
* A passion for fermentation, foraging, wild ingredients, and the potential of drinks to be both nourishing and expressive.
* A love for music culture, soundscapes, and a thoughtful understanding of what creates an unforgettable listening bar experience.
* Entrepreneurial energy, curiosity, and a desire to co-create something meaningful and radically different in the drinks space.
* An interest in product development—especially in translating a bar experience into a range of bottled and canned drinks.
* Confidence in working across both guest-facing and behind-the-scenes roles, including events, workshops, and tastings.
* A genuine excitement to relocate to Stroud—to contribute to its rich creative community and build lasting relationships with local growers, makers, and neighbours.
