Job summary
Kitchen Stewards are responsible for maintaining high levels of cleanliness and organisation within a restaurant's kitchen. We are looking for a steward who will work well within a dynamic and fast-paced kitchen, handling the preparation and order of service.
SPECIFIC DUTIES
To ensure that all equipment for shift operations (including china, cutlery, pot wash and glass wash) are in compliance with all Food & Beverage policies, standards and procedures.
1. Operate and maintain cleaning equipment and tools, including the dish washing machine, hand wash stations, pot-scrubbing station, and trash compactor.
2. Wash and disinfect kitchen and store room areas, tables, tools, knives and equipment using proper chemicals and products.
3. Receive deliveries, store perishables properly and rotate stock.
4. Ensure clean wares are stored in appropriate areas.
5. Inspect, pull, and stack cleaned items, send soiled items back for re-scrubbing and re-washing.
6. Empty and maintain trashcans and dumpster area.
7. Ensure compliance with food handling, sanitation, health and safety standards and regulations.
8. Look after all equipment, china, glass and silver and ensures adequate clean supplies of each.
9. Inspect food holding and transport equipment and maintains in working order.
10. Operate and maintain all department equipment and reports malfunctions.
11. Assist with an effective dish room equipment repair and maintenance program.
12. Know and enforce proper use and cleaning of all dish room machinery.
13. Know and enforce proper cleaning routines for service ware, equipment, floors, etc.
14. Enforce proper breakdown procedures for banquets, restaurants, room service and associate cafeteria.
15. Ensure uniforms are properly maintained.
16. Attend training for COSHH (Care of Substances Hazardous to Health).
17. Perform other related tasks as assigned by management.
18. Comply with Marriott International Hotels Limited policies and procedures.
19. Carry out any other duty/function that may be assigned by the immediate manager.
20. Comply with Marriott International Hotels Limited Regional Office policies and procedures.
