We are looking for a full-time butcher to join our award-winning restaurant, café, and events catering business in King’s Cross, Central London. This unique opportunity involves working closely with both the farmer and chefs to oversee the meat supply for our diverse operations. We are committed to sourcing the highest quality, seasonal produce, with a focus on beef and lamb from our own farm in the heart of Northumberland. Our animals are grass-fed and free-range, and since 2008, we have exclusively served meat from this farm. We take great pride in offering the best of British produce, with a special emphasis on our own homegrown meat. THE ROLE The role involves sourcing and preparing high-quality, seasonal beef and lamb from the company's own farm in Northumberland. The animals are grass-fed and free-range, with all beef and lamb served exclusively from the farm since 2008. The butcher will help process the meat, which is hung in a specially designed room at the restaurant, and supply it for use in the catering operations. KEY RESPONSIBILITIES Have a recognised butchery qualification and at least 3 years previous experience in a similar role Will be fully competent in all aspects of butchery including full carcase breakdown, portion control, sausage and bacon manufacture etc. Will demonstrate excellent knife skills and practical knowledge of full carcase breakdown Will assist with creating new products in line with our already existing seasonal menu Will oversee the butchery department including stock ordering, cost control and margins, HACCP food safety system Will be responsible for the butchery department and equipment Providing guidance and mentorship to an apprentice, supporting their skills development and fostering a positive learning environment within the team.
