Job Description
Millennium Gloucester Hotel London Kensington is seeking an Executive Head Chef who will be responsible to provide kitchen and Back of House team with leadership to provide optimal cash profit from safe, high quality meal production. Under the guidance of the Hotel Operations Manager and within the limits of established M&C policies and procedures, oversees and directs all aspects of the kitchen and Back of House operation.

The Executive Head Chef Responsibilities will include:
* Menu development, looking at seasonality. Make changes to ensure food led proposition maintains relevance to target markets and optimise seasonal product availability.
* Monthly staffing forecast, looking to reduce the reliance on agency staff.
* Although an executive chef often focuses on the culinary aspects of the industry, the chef must also perform administrative duties.
* To ensure that action plans are in place to support all aspects of the F&B strategy/ business plan.
* Quality levels of production and presentation including staff canteen.
* Work with the Purchasing Manager in determining the minimum and maximum food par stocks. Ensures the completion of the market list in accordance with M&C quality and quantity standards. Inspects all perishable food items for quality
The successful candidate will be:
* Enthusiastic, self-motivated, proactive, resourceful with excellent attention to detail
* Demonstrate excellent presentation, negotiation and communication skills with the customers and other hotel departments.
* The ability to oversee multiple tasks and priorities efficiently, particularly during peak service hour.
* A strong sense of innovation, capable of developing new dishes, presentation styles, and concepts.

* The ability to work under pressure while maintaining high standards, especially in a fast-paced kitchen environment.
