Minimum Requirements:
* Minimum 5 years’ experience as a chef in a high-volume restaurant, creating high quality food products.
* Culinary degree preferred.
License Requirements:
* Must secure appropriate RI mandated gaming licenses.
* FoodSafe Certified.
Essential Job Functions:
* Schedule staff, both kitchen and dishroom, create daily specials menu.
* Calculation of inventory requirements.
* Oversee cleanliness of kitchen, refrigeration, dishroom and all other kitchen support areas.
* Communication with front of house staff.
* Ordering of all food and supplies needed, as well as costs.
* Hiring, firing and supervision of necessary personnel.
* Knowledge and compliance of all RI food codes and HACCP laws.
* Ensure wait staff and kitchen staff fully understand all items for sale each day, while ensuring security of kitchen after hours.
* Ensure all items leaving kitchen are charged for or brought to the Food Service General Kitchen Manager’s attention.
* Responsible for kitchen and all support staff during all hours of operation.
Physical/Mental Requirements:
* Continuous walking, talking, bending, and reaching during operating hours.
* Frequently testing food to ensure it is up to standard.
* Ability to lift up to 25 lbs.
Working Conditions:
* Kitchen area, and casino floor.
* Working in moderate to loud noise levels in kitchen areas, as well as moving through the casino floor.
