We are looking for a highly professional Bar Manager to join our Restaurant and Bars team for the very exciting opening of The Alfriston located in East Sussex, which dates back to the 14th century and is the fourth property in the growing Signet Collection. The newly refurbished Hotel has 38 beautifully redesigned bedrooms and suites, a stunning function room, The 1554 Brasserie, offering views over the front lawn towards the sea and revamped herb and vegetable plots across the hotel gardens. The hotel bar offers more casual dining for guests both in and outdoors, while the Orangery serves breakfast and afternoon tea with views over the rear gardens and the Signet spa includes a steam room, sauna, outdoor swimming pool and three treatment rooms. Access to apprenticeships and accredited qualifications up to Level 3. You will: Lead by example, train and motivate the bar team to achieve service standards. Maximise customer focus during every service by being present ion the bar. Ensure that all bar team members are trained to the Company standard. Motivate team members through incentives and competitions to maximise sales. Stay up to date with menu knowledge and all menu changes. Participate in the creation of wine lists, cocktail lists and events menus. Carry out periodic stock takes. Place orders for all beverages. Complete all rotas to provide cover for the bar in line with the wage cost budget. Participate in regular meetings to maximise communication between all departments. Handle deliveries. Maintain the condition of beer and wine. Maximise communication with the restaurant and kitchen teams. Keep up to date with licensing legislation, liaising with the authorities and take legal responsibility for the sale of alcohol. Ensure that every team member has completed their compliance training. Ensure that all company rules and regulations relating to Hygiene, Health and Safety are being followed.
