The Role… We are looking for an organised, enthusiastic Pastry Sous Chef with excellent leadership skills to assist the Head Pastry Chef in leading our Restaurant RenMor brigade. You will be instrumental in ensuring smooth daily operations and maintaining high standards of quality whilst inspiring creativity within the pastry department. RenMor delivers wild and sustainable, flavour driven menus through the seasons. Primary responsibilities… Working alongside and assisting the Head Pasty Chef to deliver the best possible culinary experience. You must possess an outstanding knowledge of ingredients, seasonality, techniques and cookery. Work along the Head Pastry chef to develop a first class pastry section, preparing and presenting pastries to the highest standard, ensuring guest expectations are exceeded with every bite. Ensure that recipes are always followed accurately, controlling portion size and waste. Ensure Health and Safety and Food Safety Standards are maintained in line with company policy and statutory law. Support with Pastry Team in the Head Pastry Chefs absence. Maintain strong and effective relationships with the RenMor Restaurant Manager and their front of house team. Help manage heart of house service areas to include cleanliness, hygiene, stock control and wastage. Engage with Sustainability Lead to ensure the Pastry department is assisting with the need to reduction of waste and working to meet our sustainability targets. Mentor junior pastry chefs and bakers, helping them improve their skills and understanding of pastry techniques. Supervise and support the pastry team during daily operations, providing guidance and feedback to ensure productivity and morale. Skills and experience required Proven experience as a Pastry Sous Chef, Pastry Chef de Partie, or similar role in an upscale dining environment. Strong knowledge of pastry techniques, ingredients, and current trends in the culinary world. Exceptional organizational skills and the ability to manage multiple tasks effectively. Strong leadership and communication skills to manage and motivate a team. Culinary degree or equivalent certification in pastry arts preferred. Familiarity with inventory management and cost control practices. A creative mindset with a passion for innovation in pastry and dessert design. Ability to work under pressure in a fast-paced environment. Salary and Contract This is a full-time permanent position based on a 48-hour working week including evenings, weekends and bank holidays.
