We are now seeking an experienced and passionate Specialist Broasted Chicken Chef to join our team and bring their grilling expertise to our kitchen.
Job Description:
As a Specialist Broasted Chicken Chef at Fat Rooster, you will be responsible for preparing and cooking broasted chicken using traditional techniques that emphasise flavour and texture, without relying on expensive or modern kitchen equipment. Your role will involve managing the broasting process from marination to final frying, ensuring that each piece of chicken is juicy on the inside and perfectly crispy on the outside.
Key Responsibilities:
* Broasting Preparation: Marinate chicken with a blend of spices and seasonings according to traditional broasting methods, ensuring deep flavour penetration.
* Pressure Frying: Utilise a pressure cooker for the initial cooking phase, ensuring the chicken retains its moisture and flavour while cooking thoroughly.
* Final Frying: Execute the final frying step to achieve a golden-brown crust that is crispy and delicious.
* Quality Control: Ensure all broasted chicken is cooked to perfection, maintaining consistent quality in every dish served.
* Inventory Management: Manage inventory related to the broasting station, including ordering and stock control, ensuring cost-effectiveness and minimal waste.
* Kitchen Hygiene: Maintain strict compliance with food safety and hygiene regulations, ensuring a clean and organised broasting station.
* Team Collaboration: Work closely with the rest of the kitchen team to ensure timely service and a smooth kitchen operation.
Requirements:
* Proven experience as a Broasted Chicken Chef or in a similar role, with expertise in traditional broasting techniques.
* Ability to prepare broasted chicken without relying on modern or expensive kitchen equipment, focusing on traditional methods.
* Strong understanding of pressure frying and shallow frying techniques, with a commitment to maintaining the highest standards of food quality.
* Ability to work efficiently under pressure in a fast-paced kitchen environment.
* Strong organisational skills and attention to detail, ensuring every dish meets Fat Rooster’s high standards.
Eligibility Requirements:
* Applicants must be eligible to work in the UK. Fat Rooster’s is open to sponsoring the right candidate under the Skilled Worker visa scheme if they meet the necessary criteria.
* Proof of eligibility to work in the UK will be required before employment begins.
